Moong dal soup with vegetables


  1. moong dal- 1cup

  2. coconut milk- 1/2 cup

  3. ghee- 1tsp

  4. chopped broccoli florets- 1/2 cup

  5. zucchini - 1/4 cup

  6. carrots- 1/4 cup

  7. chopped leek leaves- 1/2 cup

  8. cumin seeds- 1/4 tsp

  9. ginger paste- 1/4 tsp

  10. turmeric- 1/4 tsp

  11. parsley- 1tsp

  12. mineral salt (orsa salt)- 1/4 tsp for taste

Lets get started-

Soak the moong and boil it in 2.5 cups of water and simmer it, till it becomes soft and keep it aside. Take a saucepan , heat up the ghee for 3-4 minutes, then add the cumin seeds, ginger paste and turmeric to it. Stir it for 1 minute, then add leek leaves into this and let it stir for about a minute.

Add the chopped carrots first (as they take slight time longer to cook), let them become soft, then add zucchini and broccoli to the whole mixture. Stir well and let the vegetables cook in the pan for minimum of 7-10 minutes. Add salt to this. After they are cooked, add the moong dal and coconut milk to the the vegetables. Let it boil for 2 minutes. Take the soup in a bowl and add chopped parsley as a garnishing. The soup is ready to eat, enjoy..!!
